CAPPELLETTI with CAULIFLOWER ‘ma’s recipe

Our grandparents have lived through struggles, poverty and sometimes war and learned how to get the best out of what they had in the house.

They have raised many children and still make them grow strong and healty.

This recipe shows how to turn a simple plate into a rich dish.

The idea of the pan fried bread crumbs comes from the poor families in italy that could not afford to buy grated fresh Parmigiano to top of the meals so they thought of using old hard bread to substitute it.

The main source of food was vegetable, lentils and fish for the fisherman. Meat was consumed expecially on great occasion.

Try this recipe at home, it is very simple to make.

Boil cauliflower in a pot of water, at half cooking drop in the pasta and let it cook until ready.

In a separate pan roast some garlic and red peppers in olive oil and prepare the bread crumbs.

Mix the pasta with the garlic and serve sprinkling the bread crumbs on top.
